I am not waiting for YOU....


It is hardly SUMMER, as we have had a pretty cold snap for our 1st of May....
but I was in the mood for a Summer ICE BOX cake...

I am not waiting for SUMMMMMMMMMER!

David is training for his  RIDE to  Conquer Cancer  again this year...( thanks all to those
who have sponsored him, he is only a couple hundred dollars from his entry fee
of $2500.00)  He is my world, so it is nice that he has goals
that keeps him around a little while longer.  
So Thank YOU! 

So in celebration of him and YOU, I thought I would share this dessert with 1/2 the calories..
Yep, as I am a recipe developer, I thought, I have got to find a way to decrease
the calories of this famous dessert and voila, it taste as good as it looks....


Here is MY recipe for this ICE BOX CAKE.
NO BAKE!


1 large package of Lady Fingers ( approx 40 fingers)
I used 1 package of these minus 6....

1  16 0z tub of your favourite Vanilla Yogurt ( instead of a pint of whipping cream) 


1 8 oz tub of mascarpone, instead of 16 oz....

3 cups of berries of your choice...
I chose frozen strawberries from last summer, thaw and add 1/2 of liquid honey..

Ok, that is it...
Now what you do is, mix the mascarpone and yogurt together, they will be
the consistency of soft ice cream ....perfect...( 1/2 the calories remember)

Get a deep casserole dish...( I wanted to make enough to last the week)
start  with lady fingers on the bottom, I could put 12 on the bottom, then 
with a large spoon I spread a thin coat of my yogurt and cheese mixture...
and alternate with berries and honey., add another layers of lady fingers,  yogurt and cheese mixture, then berries.....keep doing this till you reach the top..
Hence the 44 fingers I used....

Now to soften the lady fingers, you really need this dessert to stay in your ice box
( refrigerator overnight) I made mine last night...

And while David was out, he is gone for the day cycle training....
I thought I would cuddle up with The Widow a psychological thriller..
oh my ....

For fans of Gone Girl and The Girl on the Train, an electrifying thriller that will take you into the dark spaces that exist between a husband and a wife.
As I was dishing out some  food for my riot boys, Monchat thought he would see
what I was having for LUNCH...yep my lunch today with a pot of tea...
Much more colourful than his food! 


As you can see it did not last long, the only thing I did not do was lick my plate...
I had some volunteers with the riot boys though lol. 

Turns out my wee fellow here, loves the aroma of TEA...


Meanwhile, as I gather more tea from my collection I could not help but admire
one of shades for my new t-cup lamp ....looks nice....



I asked the Riot Boys, but they were more interested in watching the birds
than visiting me today....look at their expression, when I asked them
if they wanted to join me at the TABLE lol. 

They were more interested in the outdoors that seems to be popping with 
buds everywhere...Sumo is on your right...hard to note who is who from the back..
But Monchat is much rounder that Sumo and outweighs him now by 1.5 pounds.. 


All that activity soon tuckered them out again....love how my boys nap....

While they are sleeping I am returning to my book
and possibly some stitching of my ottoman today....

  1. These boys of yours... I never tire of seeing their pictures. They are so funny. What a perfect start to your May. Looks simply divine with tea, and a sweet piece of deliciousness.     1. Every day I take photos...these are just some that make me laugh....they have so many expressions...lol And yes 1st of May began so SWEETLY.. oh those power balls...I think I may have to rename them anyway..David calls them that too...you too wink....I am back to my big yellow!

    1. sure Carol, can't say it would be any good by the time it got there....but this ice box cake is very simple to make....for any size family or person lol.

  6. Your riot boys take the most wonderful photos! I I have some notecards that have a kitten laying just like they do with their paws up and head upside down. It always makes me think of that notecard when I see their pictures. I love the one of them looking out the window and back at you like what? you think we wanted to see what you were doing? Forget it! We see some pretty interesting things out here! So sweet! I wish I could have some kitties! We have chickens that give their own free shows. Just not the same as purring right next to you.     1. Hi Kristy, thank you for your sweet note...yes cats do have the most unusual sleeping habits, they are such a treat to behold all day long. Chickens would be fun to photograph, but I too cannot imagine they are the cuddling kind lol

    2. Actually they are fun to hold and they will snuggle down into your arm. They are super soft! All those feathers! :-) We have names for all of ours. They just don't let you hold them for a really long time. nor do they purr, they do coo though. Have a great day! K-

    Your boys are so sweet and cute. I love my kittyboys too.
    Miles is orange and he is naughty at night. I put him in Lizzie's old room upstairs that has NOTHING in it except a box with a kitty bed in it, with a little heat pad. A litter box and some blankets, his fancy tray with waterbowl and yummies in a bowl

    He likes his room and begs to go in it at 9:00 every night. If I am late, he will start chewing on things and knocking stuff on the floor.
    :-P really

    Pierro is an angel,good as gold, we play with him quietly for the rest of the evening.
    This cake looks really good. I like cookies, and I like real food so this recipe would work for me. I do not like cookwhip or fake sugar, so I am glad you and I are on the same page here. My favorite eat a lot cake is angel food cake. I could eat a whole cake. hahahahahhaaa

    1. Ohhh I love hearig about Pierro and Miles...funny that Miles wants to be on his own at night...our boys are not there yet...they love being close at night...
      And yes this ice cake you would love...it is very much like angel food cake and still very light...and the yogurt with mascarpone is much better than fake whip cream ...I cannot eat that ....I get quite a reaction ...

    1. HI Mary Ann, sometimes the simplest things are the perfect way to start the day...a bit of gingham certainly does that for me... YOU could never take me anywhere where I would not compare it to my mornings unless of course a hot apple pie was served on a gingham plate lol.. I may think about it...Every one can do this....take time to love those few minutes of me time x
